Home Grown Dinner

The benefit of having my own garden and putting up the food that I grow?

1. Fresh eggplant in the dead of winter
2. Enough homemade sauce, canned to last the winter/spring
3. Yummy dinner for cheap!

Homemade Eggplant Parmigiana made from frozen- home grown eggplant. (the cost was the about .08 per seed, and I got about 5 eggplants per plant, so negligible). The sauce is also homemade- again, the cost was for seeds, also negligible. The only thing that I had to buy to contribute to this meal: bread crumbs (1/3 cup) (I'm going to learn how to make my own), mozzarella cheese (1/2 cup), and parmesan cheese (2 TBSP), which are minimal. The final great thing about this meal- it made enough for 2 dinners, and it's baked, not fried so it's a much healthier!

I think this dinner deserves and A+ for cost and taste! It's now one of my go-to meals because it's cheap, easy and yummy!
