Canned Lima Beans

This weekend was yet another adventure in the canning world! I bought some lima beans from New Jersey- the same place I got the green beans. I bought a bushel this time around as well. However, because of the differences between lima beans and green beans, you obviously get more green beans than lima beans because of the sizes. Friday night, my mom brought them to me and we spent about an hour shelling the beans. I have to say, I enjoyed this process much more than the washing and cutting of the green beans. It's less tedious, can be done in front of the tv, and took a 1/3 of the time it took to was and cut the beans. I then put all the limas in a bowl and refrigerated them for the night because I didn't feel like canning them at 10pm. Saturday morning I rinsed/washed the lima beans, and put them into pint jars. My estimation was that I would get 10 pints, and I was right on! I put. 1/2 tsp of salt in each jar, screwed on the lids, and processed the beans for 30 minutes. Viola- canned lima beans at least part of the year!

Side note: the reason I chose to can the lima beans instead of freezing is because we do not have an extra freezer and I have more space for canned goods than I do for frozen foods.... On the list- to buy a small chest freezer
