#NaptimePursuits: Baking Muffins

As a new mommy, I am quickly learning that not everything on my to-do list has to get done everyday. The time of my baby being tiny is going so fast and the house will still be here tomorrow, so not everything on my list has to get done everyday. I have started making shorter to-do lists and prioritizing what has to get done vs. what I want to get done.

This past weekend, we had plans to go to a brunch at a friends house. I had offered to make something, but I wasn't sure what I wanted to make. Hubby suggested buying something, since, you know, we have a new baby. I quickly responded with a resounding "nah" because I love taking homemade baked goods anytime we go to eat at a friends house (baking is my only "cooking" passion").

I decided to make chocolate chip muffins and found this recipe on Pinterest. I followed the recipe pretty closely. I used a powder buttermilk that you mix with water because I had that on hand and we don't have whole milk. Over at the Little Sweet Baker, she used small chocolate chips. I only had a 1/2 c of them, so I used 1c of regular chocolate chips and the 1/2c of small ones. I followed her directions to bake them.


I made them a day ahead because I figured I wouldn't feel like making them the morning on the brunch. I firmly believe in tasting food before I offer it to others (more for my benefit :-) so I ate one while it was warm. I wrapped them up in saran wrap and put them aside for Saturday. They tasted pretty good, and Hubby even complimented me on them a 2 days later! This will be a recipe that I hang on to.

    1. They were really good! There aren't any left and I am thinking about making more- maybe some blueberry ones!

  3. Muffins is the one thing I love cooking. OK, I admit, mine NEVER look like that, but still :)

    1. I've never made muffins before- at least I can't remember making them. I have done that 2 ingredient thing- a box of cake mix and 1 can of pumpkin puree, but I'm not sure if that is a muffin or a cupcake, and it's definitely not from scratch! These were so easy and the recipe I followed was excellent. These are definitely on my "keep" list!

    1. I can't say I am always so productive. Sometimes I just hold her for her naps... Still trying to get it to sink in that I'm a momma... It's only been 6 weeks!
